Hello September! It feels odd to see you already — where did June, July, and August disappear to? Today you arrived hot and bright: 88°, humid, and summery. I love warm weather, so I’m happy to embrace it. One of the best things you’ve brought is fresh figs. Sweet, tender, and perfect for a parfait.

To celebrate, I’m naming figs the Ingredient of the Month on Sweet Potato Soul. I’ve lined up several fig-forward recipes, but let’s start with breakfast: a quick vegan fig parfait that’s both satisfying and simple.

Fig Granola Parfait

This parfait layers creamy coconut vanilla yogurt with fig pumpkin granola and ripe Mission figs for a delightful contrast of textures and flavors. I used SoDelicious coconut vanilla yogurt and Purely Elizabeth’s fig pumpkin granola, but any vanilla coconut yogurt and a fig or pumpkin granola will work.

Beyond its great taste, this parfait is a fast, healthy vegan breakfast—ready in about two minutes. Figs add fiber and potassium, while coconut yogurt contributes beneficial probiotics and healthy fats. It’s an easy way to start the day on a nutritious note.

Fig Parfait

Purely Elizabeth’s fig pumpkin granola is one of my favorite store-bought options. If it’s not available or you prefer to make granola at home, you can use your favorite recipe. SoDelicious makes excellent coconut-based yogurts, available sweetened or unsweetened. This recipe makes one serving — double or triple as needed.

Total Time: 3 minutes
Servings: 1

Ingredients 

  • 3/4 cups SoDelicious vanilla yogurt
  • 1/2 cup granola
  • 4-6 figs, thinly sliced or halved

Instructions 

  • In an 8-ounce glass jar or cup, layer the vanilla coconut yogurt, granola, and fresh fig slices or halves. Repeat layers if desired and serve immediately. Enjoy!
