
Christmas is approaching and my kitchen has been busy with cookie baking. These Hot Cocoa Cookies are my latest creation: deeply chocolatey, fudgy, and crowned with a generous, gooey dollop of marshmallow creme. A dark chocolate drizzle finishes them off, adding a glossy touch and extra richness. They were inspired by a long-time idea of a chocolate cookie with a marshmallow center, finally brought together in a recipe that yields soft, tender cookies with an indulgent surprise in the middle.

I used the base of a favorite dark chocolate cookie recipe I developed earlier. That dough is ideal for intensely chocolate cookies that remain soft and fudgy. The texture is forgiving and pairs perfectly with marshmallow creme and a drizzle of melted chocolate. You can make these cookies simply as chocolate cookies or elevate them with the marshmallow center—either way they’re a great cocoa cookie to have on hand during the holidays or whenever you want a rich, comforting treat.

I’ve long noticed differences in hot chocolate traditions between countries. In some places hot cocoa is thin while hot chocolate is thick and luxurious—almost like spoonable pudding. Those thicker versions are deeply satisfying on cold days and bring back cozy memories of winter breaks and whipped cream-topped cups. These cookies aim to capture that comforting richness in cookie form: intense cocoa flavor with a soft, marshmallow center that echoes the warmth of a good hot chocolate.

Hot Cocoa Cookies
Ingredients
- ½ cup (1 stick) unsalted butter, softened
- ¾ cup white granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ⅓ cup unsweetened dark cocoa powder
- ½ teaspoon baking powder
- ¼ teaspoon salt
- one 7 oz jar marshmallow creme
- 1 cup chocolate chips, melted for drizzle
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream the softened butter and sugar together until light and creamy.
- Add the egg and beat until fully incorporated, then mix in the vanilla extract.
- Stir in the cocoa powder, baking powder, and salt until combined. Add the flour and mix until the dough comes together.
- If the dough seems too soft or sticky to handle, refrigerate it for 30–60 minutes to firm up. This helps maintain shape while baking.
- Line two baking sheets with parchment paper or silicone baking mats. Scoop tablespoon-sized portions of dough onto the sheets, spacing them evenly (about 12 per sheet).
- Bake for 10–12 minutes, until the tops appear set and slightly dry. The cookies will still be soft but will firm up as they cool.
- While the cookies are still warm but not piping hot, press a gentle indentation in the center of each cookie with your thumb or the back of a spoon.
- Spoon a small amount of marshmallow creme into each indentation, then drizzle with melted chocolate. Allow the chocolate to set before serving.

These cookies are ideal for holiday cookie exchanges, cozy nights by the fire, or whenever you want a chocolate treat with a soft, gooey center. You can vary the topping—use white chocolate for a contrast, sprinkle a little toffee or flaky salt over the drizzle, or leave them plain for a simpler approach.
