Ingredients
- 2 medium zucchini
- 2 Tablespoons olive oil (or butter)
- 1/2 onion, diced
- 3 cloves garlic, minced (or to taste)
- 2 cups spinach leaves
- 3/4 cup Parmesan cheese (approximately)
- Kosher or sea salt, to taste
- Black pepper, to taste
- 1/4 teaspoon red chili flakes
Instructions

Spiralize the zucchini into noodle strands and set them aside.

Heat a large pan over medium-high heat. Add the olive oil or butter, then sauté the diced onion and minced garlic until fragrant and translucent—avoid burning the garlic.

Add the zucchini noodles and cook until tender, about 3–5 minutes. Taste a strand to determine how “al dente” you prefer them; avoid overcooking to prevent mushy noodles.

Stir in the spinach and cook until wilted.

Remove the pan from the heat, toss in the Parmesan, and season with salt, pepper, and red chili flakes to taste. Serve warm.
