Ingredients

  • 2 medium zucchini
  • 2 Tablespoons olive oil (or butter)
  • 1/2 onion, diced
  • 3 cloves garlic, minced (or to taste)
  • 2 cups spinach leaves
  • 3/4 cup Parmesan cheese (approximately)
  • Kosher or sea salt, to taste
  • Black pepper, to taste
  • 1/4 teaspoon red chili flakes

Instructions

  • Spiralize the zucchini into noodle strands and set them aside.
  • Heat a large pan over medium-high heat. Add the olive oil or butter, then sauté the diced onion and minced garlic until fragrant and translucent—avoid burning the garlic.
  • Add the zucchini noodles and cook until tender, about 3–5 minutes. Taste a strand to determine how “al dente” you prefer them; avoid overcooking to prevent mushy noodles.
  • Stir in the spinach and cook until wilted.
  • Remove the pan from the heat, toss in the Parmesan, and season with salt, pepper, and red chili flakes to taste. Serve warm.
