At last, I ran out of kiwis — and honestly, that’s a relief. I won’t be buying an entire batch of one fruit like that any time soon. This week I decided to switch things up and try something different: a quick, tasty blueberry smoothie. I wasn’t always a blueberry fan, but my son convinced me they’re great. Now this Easy Blueberry Breakfast Smoothie {Vegan & GF) has become one of my go-to morning options, especially since my kiwi stash is gone.
I’ll admit I had a mini meltdown when the last kiwi disappeared. I stood in the fridge doorway, frustrated and considering a trip to the donut shop, until my son — probably annoyed I was blocking the way — suggested blueberries. I gave it a try, tweaked the recipe, and ended up with a bright, refreshing breakfast that tones down my donut cravings.

Blueberries make this smoothie bright and satisfying. It’s vegan, gluten-free, and ready in minutes — perfect for busy mornings or a light, healthy breakfast.
Ingredients
- 2 cans coconut milk, refrigerated overnight
- 1 cup blueberries (fresh preferred, frozen works too)
- 1 tsp honey
- 1/3 tsp nutritional yeast (optional)
- 1/2 cup coconut milk (the kind you might use on cereal)
- Pinch of salt
- Pinch of cinnamon
- Sprig of mint for garnish (optional)
Instructions
- Open the refrigerated coconut milk cans from the bottom, drain off the watery liquid, and scoop the thick cream into a blender or food processor.
- Add the blueberries, honey, cinnamon, the 1/2 cup coconut milk, and a pinch of salt.
- Blend until smooth and creamy.
- If you like, stir in the nutritional yeast for a slight savory note.
- Garnish with a sprig of mint on top.
- Optionally drop a few blueberries on top for presentation.
