These blondies get their ideal texture from a mix of butter, plenty of brown sugar, eggs, and a touch of creamy peanut butter. The peanut butter flavor is noticeable without overpowering the blondie—if you want a stronger peanut butter punch, try using peanut butter M&M’s. Peanut Butter M&M Blondies
Ingredients
- ½ cup 1 stick unsalted butter
- 2 cups brown sugar
- ½ cup creamy peanut butter
- 2 eggs
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups M&Ms
Instructions
- Preheat oven to 350°F. Grease a 9×13” baking dish.
- In a medium saucepan, melt the butter and brown sugar, stirring until smooth. Remove from heat and stir in the peanut butter. Let cool while you combine the flour, baking powder, baking soda, and salt.
- Add the eggs to the brown sugar–peanut butter mixture one at a time, mixing well after each addition.
- Stir in the vanilla.
- Pour the wet mixture into the dry ingredients and stir until combined. The batter will be thick and smooth.
- Fold in 1 cup of the M&M’s.
- Spread the batter into the prepared baking dish. Top with the remaining ½ cup M&M’s, pressing them gently into the batter.
- Bake for 25 minutes, until the top is golden brown.
- Let cool completely, cut into squares, and enjoy.
