Maple Bacon Chocolate Chip Cookies

I’m kicking off Bacon Month with these Maple Bacon Chocolate Chip Cookies. I combined classic chocolate chip cookie flavors with maple and crispy bacon to create a cookie that’s familiar yet exciting. If you’re hesitant about adding bacon to a sweet treat, give these a try—my family loved them with a cold glass of milk.

Brian is a big chocolate chip cookie fan—and an even bigger fan of raw cookie dough. I’m more cautious about eating raw dough unless it’s egg-free, so I usually pass on that. That said, these baked cookies were a hit with everyone who tried them.

Some people shy away from mixing bacon into desserts, but when done right the savory-sweet contrast works beautifully. These cookies are a perfect example: the maple extract brightens the flavor while the bacon adds crunchy, salty depth.

Ingredients

  • ½ cup butter, softened 1 stick
  • ½ cup packed brown sugar
  • 1 teaspoon baking soda
  • 1 large egg
  • 1 large egg white save yolk for another use or discard
  • 1 cup all-purpose flour
  • 1 box instant vanilla pudding mix, dry 3.4 oz
  • 1 teaspoon maple extract
  • 1 ½ cups chocolate chips
  • ½ cup chopped cooked bacon

Instructions

  • Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone mat and set aside.
  • In a large mixing bowl, beat the softened butter, brown sugar, and baking soda with an electric mixer until combined. Beat in the egg and egg white. Stir in the flour, dry pudding mix, and maple extract.
  • Fold in the chocolate chips and chopped bacon using a wooden spoon or spatula.
  • Drop the dough by rounded teaspoonfuls about 2 inches apart on the prepared baking sheet. Bake 10–12 minutes or until set. Let cookies cool on the baking sheet for 2–3 minutes, then transfer to a wire rack to cool completely.

Notes

  • If you don’t have maple extract, vanilla will work as a substitute; the flavor will be different but still tasty.
