Healthy meals cooked on a flat top griddle don’t often pack this much flavor — enter Blackstone Tequila Lime Shrimp Bowls.
They feel indulgent, but are a light, nutritious option you’ll want to make again and again.
This recipe is ideal for meal prep: cook once and reheat for quick, satisfying lunches or dinners.
Best part — the shrimp and veggies take only about 5 minutes on the Blackstone griddle.
Perfect for busy nights or chilly days when you want something fast and flavorful.

How to make Blackstone Tequila Lime Shrimp Bowls
Start by peeling and deveining 1 pound of jumbo shrimp. Arrange all other ingredients on a tray so they’re easy to carry to the griddle.
To save time, use a 4-cup bag of pre-shredded vegetables from the produce section — broccoli slaw or a salad kit mix work well. For the rice, microwave pouches of cilantro lime rice are convenient, though cooking the rice on the griddle adds extra flavor.

Preheat your Blackstone or flat top griddle to medium. Add your preferred cooking oil across the surface, then spread the veggie mix, shrimp, and rice in separate areas of the griddle.

Season the shrimp and veggies with tequila lime seasoning (I used Blackstone Tequila Lime Seasoning), plus kosher salt and pepper to taste.

If you cook the rice on the griddle, add a little water and cover with a melting dome to steam it. Flip and mix the shrimp and veggies for about 4 minutes until the shrimp are opaque and the vegetables are tender-crisp.

Remove the veggies and rice from the griddle and set them on the tray. Drizzle about 2 tablespoons of hot honey over the shrimp, toss, and cook for 1 more minute so the shrimp glaze nicely.

Finish cooking the shrimp until they’re evenly coated and slightly caramelized, then remove from heat and get ready to assemble bowls.

If you cooked rice on the griddle, stir it a couple times while covered and add more water if needed, cooking 4–5 minutes total until heated through and fluffy.

Ingredients
- cooking oil of choice
- 1 pound jumbo shrimp peeled and deveined
- 4 cups shredded veggie mix, broccoli slaw, or salad kit (e.g., red cabbage, kale, green onions, carrots)
- 1 to 2 teaspoons tequila lime seasoning blend
- kosher salt and black pepper, to taste
- 2 tablespoons hot honey
- 4 cups cilantro lime rice (about 2 microwave pouches or equivalent)
- 4 lime wedges
- Optional toppings: fresh cilantro, sliced avocado, green onions, extra hot honey
Instructions

Preheat griddle to medium. Add oil across the surface. Place shrimp on one side and the veggie mix on the other; add rice to the griddle if cooking it there. Season shrimp and veggies with tequila lime seasoning, kosher salt, and pepper.

Cook both for about 4 minutes, stirring occasionally. Remove the veggies and rice when done. Add hot honey to the shrimp and cook, stirring, for 1 more minute.
