One more baking recipe before the holidays? If you still have cookies on your list, consider swapping in a batch of bars—these blondies are an absolute must-make for the season.

Minnesotan!

While holidays often mean cookies, sometimes bars are the perfect change of pace. In Minnesota, a plate of bars is practically a tradition—alongside hot dish, of course. Bars are especially great for casual bakers: mix the batter, spread it in a pan, bake, and you’re done. Less time baking multiple batches means more time for whatever else you want to do—whether that’s browsing Pinterest or making silly faces at someone you love.

Baking bars also cuts down on post-bake cleanup, which is always a bonus. And what I adore most about these Peanut Butter M&M Blondies are the chewy edges—especially a large piece that’s both edge and soft middle. If you prefer the softer middle pieces, even better—we make perfect blondie-sharing partners: you take the middle, I’ll take the edges, and everyone wins.

These blondies get their ideal texture from a mix of butter, plenty of brown sugar, eggs, and a touch of creamy peanut butter. The peanut butter flavor is noticeable without overpowering the blondie—if you want a stronger peanut butter punch, try using peanut butter M&M’s. For festive gatherings, use holiday-colored M&M’s to make a cheerful tray that looks impressive but is quick and easy to pull together.

Ingredients

  • ½ cup 1 stick unsalted butter
  • 2 cups brown sugar
  • ½ cup creamy peanut butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups M&Ms

Instructions

  1. Preheat oven to 350°F. Grease a 9×13” baking dish.
  2. In a medium saucepan, melt the butter and brown sugar, stirring until smooth. Remove from heat and stir in the peanut butter. Let cool while you combine the flour, baking powder, baking soda, and salt.
  3. Add the eggs to the brown sugar–peanut butter mixture one at a time, mixing well after each addition.
  4. Stir in the vanilla.
  5. Pour the wet mixture into the dry ingredients and stir until combined. The batter will be thick and smooth.
  6. Fold in 1 cup of the M&M’s.
  7. Spread the batter into the prepared baking dish. Top with the remaining ½ cup M&M’s, pressing them gently into the batter.
  8. Bake for 25 minutes, until the top is golden brown.
  9. Let cool completely, cut into squares, and enjoy.
