I love tacos of every kind. This is the first taco recipe on the blog that’s completely meat-free, and honestly it doesn’t need meat. Fluffy quinoa, black beans, and ripe avocado deliver plenty of flavor on their own. I like to sprinkle a little queso fresco on top because I enjoy cheese, but these are delicious without it.

These tacos come together in under half an hour—the longest step is cooking the quinoa. Quinoa is naturally gluten free and packed with protein, which makes it a great base for these tacos. You can find quinoa in most grocery stores, but I prefer the variety my mother-in-law brings from Peru.

Many recipes use five ingredients or fewer, and after browsing the book I realized I could prepare a lot of the dishes with items I already had on hand.

The book clearly explains the gluten free diet and offers practical guidance, from pantry essentials to helpful do’s and don’ts. It’s organized into categories so you can easily find what you need, and each recipe notes whether it’s dairy-free or vegetarian. My family loved these tacos, and they were a hit with my grandparents as well. They’re ideal for feeding a crowd and are very budget friendly.

These tacos are versatile: the core ingredients are quinoa, black beans, and avocado, but you can easily add diced chicken, shredded cheese, or a dollop of sour cream if you like. Use whatever you have on hand to customize them.

Quinoa and Black Bean Tacos + The Easy Gluten Free Cookbook Review

Ingredients

  • 1 tablespoon olive oil
  • 1 small red onion chopped
  • 2 tablespoons minced garlic
  • 1 cup water
  • ½ cup quinoa
  • 1 teaspoon ground cumin
  • ½ teaspoon red pepper flakes
  • 1 15-ounce can black beans, drained and rinsed
  • ¼ cup freshly squeezed lime juice
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 6 to 8 small corn tortillas warmed
  • 1 small avocado halved, pitted, peeled, and sliced

Instructions

  • In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté about 4 minutes, until the onion is translucent.
  • Add the water, quinoa, ground cumin, and red pepper flakes.
  • Bring to a boil, then reduce the heat, cover, and simmer 12 to 15 minutes, or until the quinoa is cooked and fluffy.
  • Stir in the black beans, lime juice, salt, and pepper. Adjust seasoning to taste.
  • Spoon the quinoa and bean mixture into warm corn tortillas, top with avocado slices, and serve.
