Savory Stuffed Dates with vegan cream cheese, crushed pistachios, a touch of maple syrup, and hemp and chia seeds — an elegant, simple appetizer.

This year I set a fun reading goal: 50 books in 2025. I’m off to a good start with four finished already, and I plan to combine audiobooks and Kindle reads to reach the target.
During the day I often listen to conversational, motivational books while cooking, testing recipes, or tidying the kitchen. I recently finished Mel Robbins’ The Let Them Theory and have been enjoying applying its easy mantra in everyday moments.
In the evenings, M and I relax with our Kindles and a glass of wine or kombucha while our pup Flora naps before dinner. Right now we’re both immersed in Rebecca Yarros’ Fourth Wing series — the newest installment is keeping us turning pages.
Reading brings a lot of joy, so I’m prioritizing books over podcasts, TV, and social media. Whenever we settle in for an evening of reading, snacks are a must. These Savory Stuffed Dates are always welcome at our little reading parties.
The dates are filled with creamy vegan cheese, topped with chopped pistachios, and finished with hemp and chia seeds for a nutritious crunch. A light drizzle of maple syrup is optional but lovely for those who want a touch more sweetness.
What You Need to Make Savory Stuffed Dates
These ingredients are pantry-friendly — you may already have most of them on hand. Raid the fridge and pantry and assemble a platter in minutes.
Ingredients:
- Medjool dates
- Vegan cream cheese (store-bought or homemade)
- Roasted pistachios, roughly chopped
- Maple syrup (optional)
- Organic hemp seeds
- Organic chia seeds

How to Make Savory Stuffed Dates
This recipe is quick and easy — you can assemble it in under five minutes.
- Slice each Medjool date lengthwise and remove the pit.
- Spoon 2–3 teaspoons of vegan cream cheese into the cavity of each date.
- Top with a sprinkle of chopped pistachios.
- Optionally drizzle a small amount of maple syrup over each date.
- Finish with a dusting of hemp seeds and chia seeds so they stick to the cream cheese.
- Serve immediately and enjoy.

Brand Notes
I like topping these dates with nutrient-dense seeds. Hemp seeds are a rare plant-based source of complete protein and omega-3s, and chia seeds bring protein, fiber, and extra texture. They pair beautifully with creamy vegan cheese and crunchy pistachios.
The seeds adhere nicely to the cream cheese, making for an attractive and nourishing bite.

Swaps and Substitutions
Use a store-bought vegan cream cheese for convenience, or make your own from cashews, tofu, coconut cream, or a blend. If you prefer different nuts, peanuts, walnuts, or cashews work well in place of pistachios.
Swap maple syrup for agave, date syrup, or honey (if you include honey in your diet). Mix in other seeds like pumpkin, sunflower, or sesame for variety.

Notes on Meal Prep
These dates are best served fresh, but they can be prepped ahead. Store pitted and filled dates in an airtight container in the refrigerator for up to three days.
For best texture, wait to drizzle maple syrup and sprinkle the hemp and chia seeds right before serving so toppings remain crisp and vibrant.

How to Serve Savory Stuffed Dates
These savory stuffed dates make a stylish appetizer or a satisfying snack. The contrast of creamy, salty vegan cheese with sweet Medjool dates and crunchy pistachios is irresistible.
They’re perfect for book club, girls’ night, cocktail hour, or a cozy night in. Assemble them in minutes and watch how quickly they disappear.
Enjoy the balance of natural sweetness, healthy fats, and a bit of protein — a small bite that feels indulgent and nourishing.
Enjoy!
