Ingredients

  • 12 Medjool dates
  • 1/2 cup vegan cream (homemade or store bought)
  • 2 TBSP roasted pistachios, roughly chopped
  • 1 TBSP pure maple syrup (optional)
  • 1 tsp organic hemp seeds
  • 1 tsp organic chia seeds

Instructions

  1. Slice all of the Medjool dates lengthwise down the center and remove the pits.
  2. Stuff each date with 2–3 tsp of vegan cream cheese and sprinkle with chopped pistachios.
  3. Drizzle a small amount of maple syrup if using, then sprinkle hemp and chia seeds.
  4. Enjoy immediately.
  5. Store stuffed dates in the refrigerator for up to 3 days. Wait to drizzle syrup and add seeds until right before serving.
