Catherine Wheel Sausages with Garlic & Sage: Crispy Herb-Roasted Recipe

A great way to turn plain sausages into a fun meal. These Catherine wheel sausages are flavoured with sage and garlic and are absolutely delicious!

I’m launching a little series I call British Friday, a regular look at the comforting, homey dishes we enjoy in the UK. British food is much more than fish and chips — from scones and Victoria sponge to banoffee pie, there’s plenty to explore.

One classic everyone knows is Sausage and Mash (or Bangers and Mash). It’s hearty, inexpensive and perfect comfort food — a family staple across Britain. Today’s twist on that favourite is the Catherine wheel sausage.

Sausage Recipes

Most of the time we simply fry sausages and serve them with mashed potatoes and gravy, but occasionally it’s fun to try a different presentation. Sausage casserole is another beloved British dish with endless variations — my version leans Mediterranean for extra warmth on a rainy day.

For this recipe we take sausage links and transform them into Catherine wheels: coiled, studded with garlic and sage, then baked. This style used to be a common butcher-shop item but is now rarer to find ready-made, so it’s satisfying to make at home. The idea comes from Jamie Oliver, and it’s worth the little extra effort.

These wheels not only look rustic and appealing but they also develop a better flavour and are leaner than fried sausages because some fat drains away during baking.

Serving Suggestions

Mashed potatoes are essential. If you want to switch things up try a sweet potato and swede (rutabaga) mash for a slightly sweeter, earthy accompaniment. A good gravy is also a must — pour it over the mash and the sausage wheels for classic comfort.

For a green side, crispy Brussels sprouts with honey and bacon make a terrific contrast in texture and flavour.

Catherine Wheel Sausage with Garlic and Sage

Ingredients 

  • 8 Cumberland sausages or your favourite
  • 2-3 cloves garlic, thinly sliced
  • 6-7 sage leaves
  • 1 tbsp olive oil

Instructions 

  • Preheat the oven to 400°F (200°C). Peel and thinly slice the garlic. Separate the sausages into two strings of four links each.
  • Gently unravel each string so the sausages form a continuous length. Massage them lightly to even out the meat.
  • Roll each length into a spiral on a baking sheet with raised edges. Tuck garlic slices and sage leaves between the coils, then insert a skewer through each wheel to keep its shape while baking.
  • Bake on the middle rack for 20 minutes or until the tops are crisp. With 5–10 minutes remaining, remove the tray, brush the wheels with olive oil and scatter any remaining sage leaves, then return to the oven for the final few minutes.
