- 3.5 lb pork butt
- 2 tbsp barbecue rub of your choice
- 1 tbsp olive oil
- 1 cup water
- ⅓ cup barbecue sauce
- 20 oz can pineapple (diced or crushed)

- Flour tortillas
- Avocado
- Sour cream
- Cilantro
How to make slow cooker pineapple pork tacos
- Set the slow cooker to Low. Pat the pork butt dry and rub it all over with the barbecue rub.
- Heat a large skillet over medium heat with the olive oil. When hot, sear the pork on all sides until browned, taking care not to burn the rub. Reduce heat if needed.
- Transfer the seared pork to a plate and keep the pan juices. Carefully add the cup of water to the hot skillet and stir to deglaze, scraping up browned bits. Pour this liquid into the slow cooker.
- Stir the barbecue sauce into the liquid in the slow cooker, then add the canned pineapple and combine.
- Reserve a large spoonful of the pineapple-barbecue mixture, then place the pork butt in the slow cooker and spoon the reserved mixture on top.
- Cover and cook on Low for about 8 hours, or until the pork easily pulls apart with a fork.
- When done, transfer the pork to a bowl and remove any twine. Optionally stir a couple spoonfuls of the cooking liquid into the meat for extra moisture and flavor.
- Shred the pork with forks, then add additional barbecue sauce if you like and toss to combine.
- Warm flour tortillas, fill with pineapple pork, and top with avocado slices, sour cream, and cilantro.
