Birthday Cheesecake

I love anything funfetti—it’s playful, colorful, and brings back childhood memories. I even hunted for funfetti icing for my birthday! Because I adore it so much, I wanted to combine that cheerful sprinkle flavor with one of my favorite desserts: cheesecake. The result is a light, creamy cheesecake studded with rainbow sprinkles that’s as festive as it is delicious.

How to Make Cheesecake

Preheat your oven to 350°F. In a mixer, beat softened cream cheese with sugar until smooth. Add sour cream and vanilla, mixing until combined. With the mixer on low, add eggs one at a time, mixing just until incorporated. Fold in the funfetti sprinkles gently so the color stays bright and doesn’t bleed too much.

Pour the filling into the graham cracker crust and bake for 35–40 minutes, or until the center is set but still slightly jiggly. Let the cheesecake cool, then chill in the refrigerator for at least four hours to fully set. Before serving, top with whipped cream and additional sprinkles if you like.

Funfetti Recipe

Adding funfetti to a classic cheesecake makes it sweeter and more playful without complicating the recipe. The sprinkles create pops of color and a slight crunch that contrast nicely with the creamy filling. This cheesecake is a great pick for celebrations where you want something both familiar and a little unexpected.

Have fun customizing it—try different sprinkle mixes or a flavored whipped cream on top. It’s a cheerful dessert that makes people smile. What occasion would you make this for? Share your ideas in the comments!
